Chi Chi's Seafood Nachos Recipe

Ingredients
Directions
  1. Spread tortilla chips on 10-inch wax paper-lined paper plate. Layer the crab, lobster and shrimp over the nachos. Sprinkle the shredded Monterey Jack cheese on top. Microwave at medium (50%) until melted, 1 1/2 to 2 1/2 minutes.
  2. Serve with salsa or picante sauce.

    But what was the red stuff sprinkled on top of the cheese? (Sprinkled like salt or powered sugar would be but obviously not either one of those!)

    Used to work for Chi-Chi's, and its been years since I have made them, but there was a sherry based cream seafood sauce we used for them. I miss that sauce!

    John, I think I found the recipe for the sauce you describe. Look at www.recipezaar.com. Called Chi Chi's Seafood Enchilada/Cancun. Did the sauce go on the nachos, too?

  5. thanks for the info on the chi-chi's seafood nachos! they changed their own recipe in mid nineties and I never liked the new ones. this is great! I also worked for chi-chis including a short and unfortunate stint in kitchen prep. The sherry sauce (yes, you marvelous people found that too, and it WAS used on the cancun entress) was not put on top of the nachos. the various bits of seafood/lobster and crab delights were mixed into the sherry sauce, like a filling for a burrito would be. it was meant to be firm, not very runny. just enough to glue all of the seafood together, monterey jack sprinkled generously on top, and a splash of paprika. served with sour cream.

    Those were the flat nachos, right? I miss the seafood flat nachos sooooooo badly! That's the recipe I'm seeking.

    I too did worked at chi chi's in the kitchen as prep then cook and then server so seen how all it was made...the seafood mixture had a touch of the sauce mixed in it to bind it together and give flavor. That mixture was put in both the enchiladas and on the nachos then covered with Monterrey cheese and baked in super powered toaster oven for few minutes to melt cheese. The flat tortillas were just corn tortillas deep fried flat
